Roasted Veggies Even Your Kids will Eat

Confession; I eat too much sugar. Bleh.
So in an effort to eat healthier food I've experimented with roasting veggies. Here's how it went;

My first try was just cauliflower which came out yummy. So this time I added broccoli & mushrooms to the mix. In the spirit of being a lazy cook I got the pre cut, bagged broccoli & cauliflower mix from Publix. It said prewashed on the bag but I washed it anyway. (okay, maybe a little OCD when it comes to veggies and pesticides- I rather be sure)

Ingredients;
2 eggs
1/2 cup water
2 tablespoons garlic powder (Yay, Garlic! The more the better!)
1 tablespoon basil
1 cup bread crumbs
Veggies of you choice. This trip I used broccoli, cauliflower & sliced mushrooms

Crack the two eggs into a gallon size ziplock or bowl.
Add water, garlic & basil
Dump in veggies and coat by stirring or zipping the bag and flipping it around.
After the veggies are well coated, dump in the bread crumbs and mix well.

Line a pan with parchment paper (to speed the clean up and get out of the kitchen sooner)
Dump out the veggie mix on and spread around with a spoon.
Spray with cooking spray to coat the bread crumbs and ensure they'll have a nice crunchy layer on top.
Bake 25 mins at 400 degrees.

Pour the wine, sit back and relax.
You just made a veggie dish your family will love.
